Vanilla Cloud Cake!

Like many young bakers, I started out baking layer cakes from a box. Duncan Hines and Betty Crocker were two of my best friends back in the day! 

I haven't used a cake mix now in decades. I don't care to count just how many!

After being gifted several good cookbooks in my early teens, I became fascinated with making cakes from scratch.

I cannot count the number of scratch cakes I've made in my lifetime either. It has to be in the thousands for sure.

Still, I keep experimenting with recipes and finding new ideas. I always seek to improve on any recipe I find.

Given that I have such a broad experience in baking, I can predict from just reading a recipe, what the finished product will be like. That also gives me insight into what outcomes for a recipe will be if I implement changes.

The inspiration for Vanilla Cloud Cake.

That was just the case here when I saw a different method for sponge cake that included vegetable oil in the batter. 

I was skeptical to say the least, but with a little experimentation, i perfected this recipe and could not be more please with it. The crumb is quite fine and it is moister than a traditional sponge cake.

After frosting the cake and serving it, we really enjoyed the texture and flavour. Sampling it the next day, both Spouse and I thought it might be even better!

Vanilla Cloud Cake.

I do love the combination if chocolate and vanilla too. So, if you want to try it with a chocolate icing, our simple Fudge Frosting, would also be ideal with this one!

Vanilla Cloud Cake. A light, airy, moist and delicious vanilla cake that's a cross between a yellow layer cake and an egg sponge cake.

Ingredients

  • 8 Eggs 
  • 2 cups sugar 
  • 1 cup canola oil 
  • 1 ⅓ cups all purpose flour
  • 1 ⅓ cups cake flour (SEE NOTE)
  • 2 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon vanilla extract 
  • 1 cup milk

Instructions

    1. PLEASE NOTE that photos of the recipe procedure appear above in the post.
    2. Grease and lightly flour two 9 inch round cake pans. I always use a circle of parchment paper in the bottom or, more recently, silicone rounds the size of the pans.
    3. Add the eggs and sugar to the bowl of an electric mixer using the whisk attachment.
    4. Whip for about 5 minutes until the mixture is pale in colour, light and airy. Air in the batter is what we want to achieve in this step.
    5. Pour in the oil and whisk for another minute or so.
      The rest of the mixing will now be done by hand, so as not to over deflate the batter.
    6. Mix together the flour/s, baking soda and salt.
    7. Sift the dry ingredient mixture over the egg mixture in the bowl. 
    8. Fold in gently. I like to do this with a hand whisk.
    9. Finally, when the flour is mostly incorporated, slowly pour in the milk, while continuing to fold with the whisk.
      Pour batter into the two prepared 9 inch round pans.
    10. Bake at 325 degrees for 40-45 minutes or until a wooden toothpick inserted into the centre comes out clean.
    11. Cool completely on a wire rack before frosting. 

Notes

You can make this cake using only all purpose flour but the combination of two flours works very well.
I have not yet tried it using all cake flour but when and if I do, I will update the recipe with the results.
