A version of this recipe first appeared here in October of 2007.

Here's a quick and simple potto side dish that we've served in our family for many years. It's become a real stand by recipe when we can't decide what to do with potatoes on the side of many meals.

The potatoes go with practically anything, making them very versatile indeed.

We first started making them as a side dish with Greek dishes like our Pork Souvlaki, which we sometimes serve on grilled skewers. They were like a mini version of the small roasted Mediterranean style potatoes we were always served at a favourite local Greek restaurant.

Since then, we have grown to love this hash-brown style potatoes.with many other things as well. They are fantastic beside simple roasted or grilled chicken, for example.

Side dishes for fish are something I get asked about all the time. This is one if our favourites with everything from pan fried cod to grilled salmon. The lemon flavour and mild herb are very complimentary to any type of fish, in my view.

Most recently we served them with grilled Peri Peri Chicken, which also works incredibly well. With something as flavour impactful as that spicy chicken, a simpler but not plain side dish works particularly well.

I think that's because as it does not compete with the main star of the plate. It almost acts as a palate cleanser between bites if that super flavourful chicken.

Since they also cook in less time than whole potatoes, they make a quick option for weeknight meals in particu;ar. I'm sure you too, will be serving them as regularly as we do.

Instructions

    1. Preheat oven to 400 degrees F.
    2. Heat a baking pan in the oven while you prepare the recipe. The hot pan will hep prevent the potatoes from sticking.
    3. Wash and dry the potatoes.
    4. Chop the potatoes into 1 inch cubes and place in a large bowl.
    5. Wash and dry 6 medium red or yellow potatoes.
    6. Chop into 1 inch cubes and place in a large bowl.
    7. Zest the lemon and chop the zest finely. I generally use the fine side of a cheese grater to zest lemons.
    8. Toss the zest and juice all together with the remaining ingredients and cubed pottoes
    9. Turn onto the hot baking sheet and spread them out evenly. A little space between them does help them to crisp better and more evenly.
    10. Bake at 400 degrees F for about 30-40 minutes or until potatoes are lightly browned and fork tender.
    11. Toss the potatoes about every 10 minutes to cook them evenly.
    12. Serve immediately.
