I always think of my Nan Morgan whenever I make these Peanut Butter Rocky Road Bars. It was one of those treats that she always seemed to have on hand.

Fine cut dried (desiccated) unsweetened coconut is the type I use in this recipe, but any kind is fine.
I remember she made these in a plain version with a can of Fussell’s thick cream stirred into melted chocolate too. All 24 of her grandchildren must have eaten thousands of those over the years in her kitchen in Port-de-Grave.

I also remember this version which she made in later years but I don’t recall her ever using the peanuts in it. That was my addition because Im partial to a change in textures and tastes.

I like plain mini marshmallows in this recipe but some folks do use coloured marshmallows too.
You can easily leave them out if you like. If you are a person who likes the salty-sweet combination, try using salted peanuts instead! I love that too.

I like to use 50% dark chocolate chips for this recipe but you can use semisweet as well.

These are quick and easy to make, delicious and great after freezing. I skipped the coconut and used natural peanut butter (no salt or sugar added) and salted peanuts. Very sweet, so I cut into small, 2-bite squares.

Ok here we go , Fussels...add instead of peanut butter...do everything tge same just sub fussels for peanut buutter. And i like to make tge peanut butter one with fruity or color marshmallows and add coconut in the mix without tge nuts...ok ..rock on by's!!

Aloha from Maui Barry!! My 91 year old Mom was born an Ellis in St Johns. My aunt and uncle live on Elizabeth Ave. I have a Newfoundland cookbook from the 1940's that I still use today. I made your rocky road recipe using salted macadamia nuts and I threw in some pretzel sticks too. Onolicous as we say in Hawaii! I throughly enjoy reading your posts.
