Our Best Pancake Recipes
This is a terrific basic recipe to which you can add your favourite berries or as my kids mostly do, chocolate chips. I find it best to sprinkle the berries or chocolate chips on the pancakes while they are on the grill before you flip them for best even distribution in every bite.
Pina Colada Pancakes with Vanilla Rum Syrup. A bit of an adult flavour combination in this delicious brunch dish but since the alcohol is completely cooked off the kids can enjoy it too; or just serve theirs with maple syrup. A great recipe for annual Pancake Day.
Chocolate Coconut Banana Pancakes. So easy to make! Sometimes when you throw a few favourite ingredients together something delicious happens.

Thank you so much for the Basic Buttermilk Pancake recipe. Just what I was looking for! I'll try it out tonight. Happy Pancake Day! Thank you too for posting so many wonderful recipes from "The Rock"!!
P.S. I photograph lighthouses as a hobby, and I have taken (I believe) shots of all of the ones we could get to, in Newfoundland. (Rose Blanche is my favourite lighthouse in Canada. I really like the old Cape Spear Lighthouse too.) You had a post quite a while ago, where you mentioned that you and your family went on a picnic, (with a basket full of yummy stuff) to a lighthouse. Do you remember that post and what lighthouse that would have been and where it's located? Do you know if that lighthouse is still there? (Government didn't decommission or remove it, hopefully.) And lastly, it looked like you were going by boat. Do you know if there is a boat in the area that would ferry tourists over? I'd love to hear your thoughts.

Is the melted butter used in the actual pancake mix .org for the pan? I noticed that it was omitted in the batter in the banana coconut choc chip recipe.
